Vanilla Buttercream Frosting

I made this icing to decorate some Christmas sugar cookies that I made.  It was delicious!!! This frosting was not only the perfect amount, but it was the perfect consistency.  Next time, though, I will use clear vanilla if I am going to leave it white.

Vanilla Buttercream Frosting

Makes about 2.5 cups

Ingredients:

1 cup butter, softened (not melted!)

3 – 4 cups powdered sugar, sifted

1/4 teaspoon salt

1 tablespoon clear vanilla extract

up to 4 tablespoons milk or heavy cream

 Instructions:

Cream the butter for a couple minutes with beaters at medium speed.  Add 3 cups of powdered sugar and blend together a low speed until the sugar has been incorporated into the butter.

Increase the beater speed to medium and add the vanilla, salt, and 2 tablespoons of cream. Beat for 3 more minutes.

If your frosting needs a stiffer consistency, add remaining sugar.  If your frosting needs to be thinned out, add remaining cream, one tablespoon at a time.
