Classic Mashed Potatoes

One thing that Colombia has no shortage of is potatoes.  There are so many different varieties here that I have never even seen before!  The only thing I had to do was decide what type to use!  I ended up getting some that Leito told me were called papas pastusas. They tasted pretty much like any potato I have used in the States.  I have yet to learn all the different uses for each kind of potato here!

Classic Mashed Potatoes

Makes about 4 servings

Ingredients:

2  pounds potatoes, peeled and quartered

2 tablespoons butter

1 cup milk

salt and pepper to taste

 

 Instructions:

Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 20 minutes; drain.

In a small saucepan heat butter and milk over low heat until butter is melted. Using a potato masher or electric beater, slowly blend milk mixture into potatoes until smooth and creamy. Season with salt and pepper to taste.
